Blush bubbles

You may already be a fan of pink bubbly but did you know that although rosé sparkling wine has always been produced in the north east of Italy, the home of prosecco, it could not be called prosecco because, like champagne, use of the name is governed by strict regulations.

But now, with so many people regularly quaffing prosecco, generating huge sales around the world, the Italian government has allowed a Rosé to be produced under the prestigious D.O.C denomination. Prosecco rosé is made from the prosecco grape Glera with an addition of at least 10% Pinot Noir to give the wine its pink colour. The regulations set out by the ‘Consorzio di Tutela’ also demand the wine must come from one single harvest to produce a vintage wine with 60 days of slow fermentation to increase complexity.

With authentic rosé prosecco set to be a hot new tipple this Christmas, we’ve been busy tasting the best pink fizzes. Like all wines and champagnes, not all are suitable for veggies and vegans, but these three vegan-friendly varieties are all perfect for celebrating this festive season.

M&S has been busy working with the family-owned Masottina winery in Italy to launch its new Rosé Prosecco in time for Christmas. Delicate, pale pink and with lovely berry aromas, the floral and fruity flavours are just as delicious as a traditional prosecco, with an extra juicy punch from the red fruit.
