INGREDIENTS
- Cucumbers
- Peanut butter
- Rice wine vinegar
- Soy sauce
- Ginger
- Garlic
- Red pepper flakes
- Coriander
- Peanuts
- Lime juice (optional)
METHOD
- Peel two or three cucumbers, discard the skin, then peel them into ribbons that are like noodles. Dress that “pasta” with a sauce of peanut butter thinned out with a splash of warm water and a few tablespoons of rice wine vinegar and soy sauce. Add grated ginger, minced garlic, and a pinch of red pepper flakes. Maybe some lime juice?
- Top the dish with a sprinkling of chopped cilantro and a handful of chopped roasted peanuts: Dinner!
