- 160g dates, roughly chopped
- 100ml water
- 120g blueberries
- 120g peanut butter
- 60g oats
- 50g toasted sesame seeds
Place the dates and water in a small pan, cover and simmer for 2-3 minutes. Stir, mixing to a paste and cook for a minute or so more to make a thick paste. Remove from the heat.
Add the blueberries crushing them slightly, then mix in the peanut butter and oats.
Once cool enough to handle, wet your hands slightly, and roll into 20 even sized balls.
Put the sesame seeds on a plate and roll each ball to coat. Store in an airtight container in the fridge for up to 5 days.
Cook’s tip
Toasting the sesame seeds really enhances the flavour. You can buy ready toasted sesame seeds, but it’s easy to toast your own – heat in a pan for 1-2 minutes until golden, and keep moving them round to get even colour and avoid burning. Leave to cool before using.
You can use any type of nut butter here to change up the flavour. And you could use other berries such as raspberries, strawberries or blackberries instead of blueberries.
